Sahtein is an Arabic expression said to someone who is eating — a wish for good health, a way of saying the table is yours. That warmth is what founder Darwish Darwish set out to bring to Fort Collins, one plate of Jordanian-inspired food at a time.
Where the food comes from
Darwish grew up with the flavors of Jordan — dishes built on tradition, made to be shared. Sahtein is his way of introducing that culinary heritage to Fort Collins.
The craft behind every plate
Every weekend, the kitchen grills marinated meats on skewers, handcrafts the sauces, and fries falafel fresh to order. Traditional methods are the point — they're what make the food taste like it's supposed to.
Home inside FoCo Cafe
Sahtein operates inside FoCo Cafe on Maple Street, a community-first space that supports local businesses and neighbors facing food insecurity. It's a natural fit — a restaurant rooted in hospitality, in a place built around taking care of people.
